India's sugar industry is substantially established, having a consumer base of
billions of people. India is the world's largest consumer of sugar and the world's second
largest producer. In India, there are over 45 million sugar cane growers. Sugarcane is
grown on around 4 million hectares of land in India. In India, the sugar sector is worth
Rs. 250 billion, and there are over 450 sugar mills with an average installed capacity of
18 million tons. The total number of sugar mills in Maharashtra is 199, accounting for
over 40% of all sugar mills in India.

B. Jaggery
Jaggery is an unrefined natural sugar that is made without the use of any
chemicals. India accounts for more than 70% of global jaggery output. Jaggery,
sometimes known as "medicinal sugar," is nutritionally equivalent to honey. For 3000
years, it has been utilized as a sweetener in Ayurvedic medicine. Jaggery is thought to
be effective in treating throat and lung infections in Indian Ayurvedic medicine. While
refined sugar is mostly made up of glucose and fructose, jaggery is mostly made up of
glucose and sucrose. However, jaggery has minerals and vitamins that refined sugar
does not. Jaggery contains calcium, phosphorus, magnesium, potassium, iron, and
trace amounts of zinc and copper. Folic acid and B-complex vitamins are among the
vitamins present. Apart from being a wonderful source of energy, it also helps to avoid
rheumatic diseases, biliary issues, weariness, and the relaxing of muscles, neurons, and
blood vessels; maintains blood pressure and reduces water retention; increases
hemoglobin level and prevents anemia.
